How to try to make a small portion of a trial recipe of Khara buns?

I have never baked bread before, and do not have a bread maker. Now that I live overseas I’d love to try and make these buns we used get in the Iyengar bakery in South India, made with chopped onions, possibly garlic, mint, cilantro and green chillies (not topped but mixed in… and were they ever so good!). I want to try a small portion first, but the recipes online for regular buns (none available for the one I am describing here) are for 6 cups to 8 cups of flour. I want to try it out in small portions until I get the recipe right. I am not looking for short cuts and can wait for it to rise twice. Divide the recipe quantities by 3 or 4. If the recipe calls for 6 cups, then use only 2 cups and use 1/3 of the other ingredients. Good luck.
